It is a dry version of scrambled eggs made in India, as opposed to the Parsi Akuri, which is a little more custardy and wet, like the French style.

Egg Bhurji is scrambled eggs cooked along with onion, tomato, capsicum and spices. Egg Bhurji is very easy to make with simple ingredients.

This gluten-free anda bhurji recipe comes together in under 20 minutes using minimal ingredients and can be served any time of the day with roti, paratha, bread, or pav.

The Parsi version of egg bhurji is called Akuri. Although it uses similar ingredients, the two vary in taste and texture.

If you like soft bhurji, cook the eggs until just set. Remember that they will keep cooking from the residual heat in the pan for some time. If you like perfectly cooked bhurji, cook until the eggs are nicely cooked.

If you run short of time and want to make this egg bhurji recipe even more quickly, add the eggs to a bowl and whisk them nicely. Add everything else to the same bowl and mix well. Heat oil in a pan, add the egg mixture to the pan and scramble the eggs.

For a heartier dish, add green peas or other vegetables like mushrooms, red bell peppers, green onions, etc.

Top the egg burji with fried onions or toppings like chopped onions, bhujia sev, or crushed chips for extra flavor and crunch.

Add a little milk while whisking the eggs for more fluffy eggs.

To make a creamy version, add fresh cream, mayonnaise, and grated cheese once the anda bhurji is cooked and mix everything well.
